Healthy Almond + Date Energy Snack

Naturally sweet, energizing, and rich in nutrients—these little bites are the perfect pre-client boost or afternoon ritual snack.

Ingredients

• 1 cup Medjool Dates, pitted

• 1 tbsp coconut oil

• 1 scoop collagen powder

• 2 tbsp homemade almond butter

• Pinch of sea salt

• Optional: 2 tbsp dried cranberries (or swap for goji berries)

Dark chocolate (85%+ cacao), melted

Desiccated coconut flakes for coating

Instructions

1. In a food processor, blend the Medjool dates, coconut oil, collagen, almond butter, salt, and cranberries (if using) until smooth and sticky.

2. Roll into small bite-sized balls or press into a lined tray to set as a slice.

3. Chill in the fridge for 20–30 minutes.

4. Dip each ball/slice into melted dark chocolate, then roll in coconut flakes.

5. Refrigerate again until set. Keep in an airtight container in the fridge.
